Breeanna’s Beet Salad

 

6 Crimson Beets

1 Bulb of Fennel

1 Cup of Chopped Parsley

2 Tablespoons of Chopped Dill

 

Dressing

3 Tablespoons of Olive Oil

1 Tablespoon of Dijon Mustard

½ Tablespoon of Honey

1 Teaspoon of Balsamic Vinegar

Salt & Pepper to taste

 

Boil water in a large pot and boil washed beets for 25-30 minutes until desired softness.

Peel beets and chop into bite sized pieces and put in a large mixing bowls.

Add fennel, parsley and dill into mixing bowl.

Mix together dressing ingredients and toss with the beets.
